Anthony Genovese

Anthony was born in France to a Calabrian family. Rigorous training and important experiences between Southern France, Tokyo, London and Malaysia brought him back to Italy. Michelin-starred first in Ravello, then double star at Pagliaccio in Rome.

Matteo Zappile 
General Manager

Matteo Zappile leads Pagliaccio’s dining room brigade. Talent for service, high education (among wine, beer and sake) and experience in starred and luxury hotels lead him to receive, among many awards, that of Best Michelin Room Service 2022

Francesco Di Lorenzo

Chef de Cuisine

A pillar of Pagliaccio, Francesco is a graduate of IPSAR in Praia a Mare, moving on to Goldner Loewe in Austria. A training background between Florence, Ravello and Scalea eventually led him to Rome, as Anthony Genovese’s right-hand man.

Veronica Loachamin
Assistant General Manager 

Born in 1989, she arrived at Pagliaccio restaurant in 2018 with an extensive background in Rome. Here she acquired fine dining techniques and skills. Veronica became Matteo Zappile assistant from January 2022.

Luca Belleggia
Head Sommelier

Born in 1990, Luca discovered his love for wine in Burgundy. After Ais and WSET certifications, he landed at Pagliaccio in 2016. Also a saké sommelier, he became Chevalier for the “Ordre des Coteaux de Champagne” in 2019.
